“Shabbos” is the Yiddish form of Hebrew “shabbath” or the sabbath, the 7th day. (The Jooish day starts at sunset, because according to the Genesis, darkness preceded light)
Traditionally, Joos were not allowed to work, light or extinguish fire during the sabbath, from Friday sunset to Saturday sunset. To make sure they don’t infringe on the religious law, the Jooish sabbath starts one hour before the sunset or earlier on Friday, and ends at sunset on Saturday or one hour or so later.
In eastern Europe, religious Joos hired Christians to turn on the lamp on Friday evening and turn it off after the meal is eaten, etc.
Thus these Chrisitans who worked for religious Joos were called “shabbos goys” or non-Joos who work during the sabbath doing things forbidden for Joos.
