They know because they have the best intel network in the ME.

The bigger question is why would Iran just arbitrarily attack Israel like that, knowing the reaction that would come from Israel. The US, and in a protracted conflict, even possibly Saudi Arabia.
Iran would not.
The recent attack on the Saudi refinery was definitely an inside job. Just like 911.

Demonization of certain countries and their leaders through mass media is the important step before plunging the innocent peoples into bloodshed.
Germany, Serbia, Russia, just to mention a few. And now Iran.
